Instructions
Roast the Sweet Potatoes:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, salt, pepper, and cinnamon. Spread them in an even layer on the baking sheet.
Roast for 15 minutes, then flip the potatoes and roast for another 10 minutes or until tender and slightly caramelized.
Meanwhile, in a small saucepan, melt butter over low heat. Stir in maple syrup and cayenne (if using). Drizzle the mixture over the sweet potatoes and return them to the oven for 5 more minutes.
Notes
Optional: Sprinkle with chopped pecans before serving.
