Aronia Berry Compote with Honey and Cinnamon

Ingredients

  • 2 cups fresh or frozen aronia berries
  • 2 tbsp honey or maple syrup for a vegan option
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ΒΌ tsp ground ginger optional
  • 2 tbsp water
  • 1 tbsp cornstarch optional, for thicker consistency

Instructions

  • Cook the Aronia Berries:
  • In a medium saucepan, combine aronia berries, honey, lemon juice, cinnamon, and water.
  • Bring to a simmer over medium heat, stirring occasionally. The berries will begin to break down and release their juices.
  • Let the mixture simmer for about 10-15 minutes, stirring often, until the berries soften and the liquid reduces.
  • Thicken the Compote (Optional):
  • If you prefer a thicker compote, mix cornstarch with 1 tbsp of water to form a slurry.
  • Stir the slurry into the berry mixture and cook for another 2-3 minutes until it thickens to your desired consistency.
  • Serve:
  • Let the compote cool slightly before serving.
  • Spoon over pancakes, waffles, yogurt, or even as a topping for cheesecake or vanilla ice cream.

Notes

Variations & Tips:
For an extra twist, try adding a bit of vanilla extract or a splash of orange juice.
