Maple Glazed Sweet Potatoes
Maple-Glazed Sweet Potatoes:
Ingredients
- 2 large sweet potatoes peeled and cut into ½-inch rounds
- 2 tbsp butter
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- ½ tsp cinnamon
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne optional, for a hint of heat
- ¼ cup chopped pecans optional, for crunch
Instructions
- Roast the Sweet Potatoes:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, pepper, and cinnamon. Spread them in an even layer on the baking sheet.
- Roast for 15 minutes, then flip the potatoes and roast for another 10 minutes or until tender and slightly caramelized.
- Meanwhile, in a small saucepan, melt butter over low heat. Stir in maple syrup and cayenne (if using). Drizzle the mixture over the sweet potatoes and return them to the oven for 5 more minutes.
Notes
Optional: Sprinkle with chopped pecans before serving.
