Maple Glazed Sweet Potatoes

 

Maple-Glazed Sweet Potatoes:

Ingredients

  • 2 large sweet potatoes peeled and cut into ½-inch rounds
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne optional, for a hint of heat
  • ¼ cup chopped pecans optional, for crunch

Instructions

  • Roast the Sweet Potatoes:
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss sweet potato rounds with olive oil, salt, pepper, and cinnamon. Spread them in an even layer on the baking sheet.
  • Roast for 15 minutes, then flip the potatoes and roast for another 10 minutes or until tender and slightly caramelized.
  • Meanwhile, in a small saucepan, melt butter over low heat. Stir in maple syrup and cayenne (if using). Drizzle the mixture over the sweet potatoes and return them to the oven for 5 more minutes.

Notes

Optional: Sprinkle with chopped pecans before serving.
